Pasta is a generic term for foods made from an unleavened dough of wheat or buckwheat flour and water, sometimes with other ingredients such as eggs and vegetable extracts. There are hundreds of different shapes of pasta. The oldest known pasta or noodle-like food was found in China. The 4,000-year-old noodles appear to have been made from millet.

This week, we are “In the Kitchen” at Lidia’s. Executive Chef Dan Swinney features a Pasta Trio with recipes for Gnocchi, Fettucine and Butternut Squash Ravioli.
