The Bison is a member of the bovine family. Commonly called “buffalo” (which is actually a different species not found in North America), it is the largest land mammal in North America. Whether you call it Bison or American Buffalo, it has a sweeter and richer flavor than other red meats. Bison is a highly nutrient dense food because of the proportion of protein, fat, mineral, and fatty acids to its caloric value. The product for this show is from the KC Buffalo Company, LLC located in rural Missouri on the eastern edge of the Great American Prairie. These farm-raised Buffalo are free ranging, USDA inspected and free of hormones, growth stimulants and antibiotics.
