A quesadilla is a flour or a corn tortilla filled with a savory mixture containing cheese and other ingredients, This dish originated in Mexico, and the name is derived from tortilla and the Spanish word for cheese, queso. Analogous to the American grilled cheese sandwich, the quesadilla is usually prepared on on a grill or frying pan.

Braising has been reinvigorated by the "slow cook movement." Its purpose is to break down fibers and add moisture and flavor to, otherwise, tougher and less expensive cuts of meat.
